Banana Chocolate Chia Cookies

Ingredients:

  • 2 eggs

  • 1 cup greek plain yogurt (optional- if dairy free)

  • 4 medium bananas

  • 1-2 tbs chia seeds

  • 1/2-1 cup cup oatmeal

  • 1 teaspoon vanilla

  • pinch of salt

  • 1 teaspoon baking soda

  • 1 teaspoon cinnamon

  • 2 tbls softened butter OR 2 tbls of coconut oil

  • 1/2 cup of dark chocolate chunks (whole foods brand recommended)

  • 1 tbls raw cocoa powder

  • optional add ins!: 1 scoop of pb or handful of walnuts TOP with pumpkin seeds

STEPS

Bake 375° on parchment paper for 10-12 mins or until very lightly browned on top

Pop them in the fridge after they are cooled and they will be good for 4-5 days!

These cookies are a real crowd pleaser. I can say that they are my favorite snack to have in the house and my teammates, friends and family are obsessed with them! They miraculously taste like banana bread mixed with a muffin mixed with a pancake all at the same time. It is hard to convince people that they don’t have flour or added sugar (other than the choco chips) – of course they are  hesitant at first, but they always end up going crazy for them.

They are minimally processed which makes them super easy to digest. They are also fairly low glycemic – so are good for pre-workout or snacking throughout the day and will help sustain your energy without any big energy crashes. I eat them all throughout the day so they can go quickly! Sometimes I will finish an entire batch in 2 days by myself. The recipe is really flexible so I am constantly changing the ratios depending on what I have in the kitchen. You can just taste the batter and adjust accordingly!
