Fully Vegan Fresh and Zesty Artichoke Dip!!

Did you know artichokes are LOADED with antioxidants?! Artichoke dips aren’t conventionally known for being healthy. Generally artichoke dips come in the form of the classic spinach and artichoke dip thats so heavy and loaded with dairy. This dip is a spin on the classic spinach artichoke dip but is sure to leave you feeling light and satisfied instead of groggy. It is a guaranteed crowd pleaser! With cilantro, parsley, green onion the combination is incredibly refreshing and actually detoxifying.

Every party we’ve had this dip at, people do not believe it’s healthy. They assume because it’s so delicious there must be a catch, but there isn’t! This dip is summed up as the bomb dot com. Zach and I are known to make this most weekends. It’s perfect and super easy to whip up in the morning, leave it out on the counter and then snack on it Sunday afternoon post softball while just hanging around the house.

Ingredients:

  • 2 cans of drained artichokes

  • 1 bundle of parsley de-stemmed and lightly chopped

  • 1 bundle of cilantro de-stemmed and lightly chopped

  • 3 cloves of garlic

  • 1 limes zest +juice

  • 6 sliced green onions

  • 1/4 cup olive oil

  • salt and pepper

  • Sliced carrots, cucumbers, plantain chips + any other veggies or tortilla chips you’d like!

Steps:

  1. Arrange vegetables on the platter

  2. Combine all other ingredients to the food processor and puree until smooth!

  3. Add dip to a bowl on the platter and serve! Enjoy fresh right away, or put covered and chill in the fridge until ready to serve.
