Maple Pecan Granola
Ingredients:
4 cups of rolled oats
6 tbs coconut oil
1/2 cup pecan pieces (or any other type of nut you prefer)
1/4 cup maple syrup
4 tbs ceyon cinnamon (the best in my opinion!)
Dash of sea salt
1/4 cup chia seed
1/4 cup hemp seed
1/2 cup dried apple (apricots, raisin, banana whatever preferred dried fruit!)
1/2 cup shredded coconut, pieces of flakes
Preheat oven to 325 ℉ and line baking sheet with parchment paper
Method:
In a small saucepan, on medium to low heat add coconut oil and maple syrup until melted
Combine oats, pecans, cinnamon, salt in a large bowl.
Drizzle the maple syrup, coconut mixture, and stir the goodness
Spread on baking sheet, and place in oven, stirring every 5’ for 30’-40’ (until your desired crunch)
Add chia, hemp, dried fruit and coconut and put in for the last 10’ of cooking
This goes well with anything….I love having it on top an almond yogurt parfait, smoothie bowl, or as a small cereal treat with almond milk!!
