Almond Butter Stir Fry
Ingredients: (Serves 4 hungry humans)
1 tbs sesame oil
1 yellow onion- diced
5 cloves of garlic-diced
1 red chili-diced
1/2 head of red cabbage-sliced
1 head of broccoli broke into pieces.
2 cups of frozen edamame
Optional: 1 sweet potato-diced (if you’re feeling it!) add with vegetables.
Optional protein add ons: Vegetarian: Tempeh, Keto: Chicken or Pescatarian friendly: Shrimp
Optional-Serve with a side of cooked basmati rice if you want something even more filling!
Almond Butter Sauce: (Shake in mason jar to combine before putting onto stir fry)
1/4 cup of Almond/ or peanut butter
1/4-1/3 cup of almond milk (or as much as needed to make smooth sauce)
2 tbs tamari
1 tsp maple syrup
Steps:
Heat wok or large pan over medium high heat
Once warm, add tbs of sesame oil and onions for 5’
Add pinch of salt, garlic, sautee for 1’
Add the cabbage, broccoli, 4 assorted color peppers, carrots and cook for 10’ before adding the almond butter sauce-stir through well and cook for another 5-10’ or until vegetables are cooked well!
Take off heat.. Top with sliced green onions, and fresh cilantro and a squeeze of lime! VOILA! Ready to serve :)
