Fresh Vietnamese Spring Rolls
Ingredients: (Makes over a dozen wraps!) Serves roughly: 6-8 people (or enough for leftovers!)
You can also adjust the ratios based on things you really enjoy in your spring roll, or adjust the ratio of protein to be a bit more filling if you’re doing for a more substantial meal instead of snack.
Fillings:
Package of Rice paper, can use collard green wrap, or nori seaweed as a substitute!
Package of cellaphane noodles (Cook according to package instructions)
Slice the follow into thin strips:
2 Mangos
2 Avocados
2 Skinned avocados
4 Large carrots
1/2 Small red cabbage (shredded)
Bundle of mint
Bundle of basil
1 lb of shrimp or tofu
Peanut/ or Almond Sauce:
(If this doesn’t float your boat you can also just dip in sweet/sour sauce or soy sauce directly!)
Combine in mason jar and shake up the following:
1/2 cup of pb or almond butter
1/3 cup of sweet chili paste
1 tbs of liquid aminos (Can use tamari or soy sauce instead)
2 tbs honey (or maple syrup)
Few tbs of water ( or enough) to make it a smooth consistency!
