Baked Falafel

Ingredients:

  • 1 bunch of Parsley

  • 1 bunch of cilantro

  • 1/2 cup Almonds

  • 1 can of beans or 1.5 cups of mun beans

  • 1/4 cup olive oil

  • 4 cloves of garlic

  • 6 green onions

  • 1 can of artichokes

  • Salt & pepper

  • 1 limes zest+ the juice from that lime

  • Optionally: Bread in flour of choice, we used Nut crumbs (https://nutcrumbs.com/) G-free…they are fantastic and give such a nice texture!

Steps:

  1. Add al ingredients to food processor

  2. Run until mixture is well blended and creamy. Add salt and pepper to taste

  3. Scoop the mixture onto parchment paper

  4. Brush lightly with olive oil & Bake in oven at 350 F for 20 minutes

  5. ENJOY (on top of salads, as plain patties, or in a lettuce wrap)

Falafel is one of my favorites – but fried falafel can leave me feeling crummy afterwards. However this spin on an old favorite uses a combination of fresh ingredients and is a really good source of fuel. It serves up great for lunch, dinner, or even as a post-workout recovery meal. These baked falafel are super versatile – I like to bake these up for the week and then add them to roasted kale with tahini and lemon! The raw batter alone can serve as a great dip for veggies, pita, etc! Enjoy!!!
