Blackened Salmon Tacos with Mango Salsa

Blackened Salmon:

  • Cajun seasoning to rub on Salmon

  • Salt and pepper

  • Pre heat pan, butter to grease cast iron skillet or pan/ grill!

  • Cook 4’ each side over medium heat

(You can also sub fish for tofu/ tempeh or beyond meat crumbles for more plant based protein!)

Mango Salsa:

  • 1 diced mango

  • 1 diced avocado

  • 1/2 cup of corn (optional)

  • 1 cup of diced cilantro

  • 1 juiced lime

  • 1 tsp of cumin

  • Salt and pepper to taste!

Sautéed cabbage and onions:

  • Sliced cabbage and onions

  • Sprinkle salt and pepper

  • Sauté over medium heat for 10’-15’ or so until lightly caramelized !

We have Fish Tacos almost every single Tuesday, and love the tradition. We do mix it with type of salsa, different types of fish and or protein options. Sometimes we do cabbage or peppers and onions instead. But having Taco Tuesday is a fun weekly standing dinner option.
