Massaman Curry
We took a cooking class in Thailand and learned a few recipes. Massaman curry, is currently the most popular curry in the world. The combination of rich creamy, salty yet sweet is absolutely fantastic. If you haven’t tried it already you should ABSOLUTELY. 10/10, this is our favorite savory meal to make. Besides this reminding us of our amazing honeymoon, we love making it instead of having it at a restaurant because we know 100% of the ingredients going in.
Don’t get me wrong we love a good Thai restaurant!! Experimenting and trying out new places is so much fun. However, there is something about a restaurant that adds just a little bit too much sweetness though, and you don’t know exactly whats going into the dish. So for us, it’s great because for the same dish, we can have basically the whole pot for the same calories as 1 serving at a Thai place. Again, disclaimer I 100 % love eating out, and we occasionally do! Most of the time, making food at home instead of at a restaurant is 9/10 going to be gentler on your pockets, and waist line.
How to make it:
Ingredients: (Serves 4 very hungry-8)
2 cans of Full fat coconut milk (we prefer brands without any added fillers just PURE Coconut)
1 large sweet potato
1 cup of cooked Chesnuts (I prefer to buy them precooked in a bag in the canned foods section
1 lb of chicken of shrimp! (If I’m going strictly plant based I omit the meat completely. However you could use tofu!)
1 yellow onion
3 Star anise
4 Cinnamon sticks
8 Bay leaves
2 tbs of neutral cooking oil, coconut works best.
2 cups uncooked jasmine or basmati rice (make as directed on package)
Steps:
Steam sweet potatoes until tender -about 15’- set aside
Combine spices in a small container
Preheat pot over medium heat, once warm add the oil and curry paste and stir continuously
