Tom Yam Goong
Thai Chicken Noodle Soup
Ingredients:
120 gr White Prawn
200 ml Chicken Stock
5 gr Galangal sliced
2 pc Kaffir leaaves torn into pieces, discard stem
15 gr Straw mushrooms blanched
3 pc Bird eye chilis browned
1 tb Fish sauce
1 tsp Sugar
1 tb Fresh lime juice (the last thing!)
1 Bunch Fresh Coriander for garnish
Steps:
Pour Stock into small pot and bring to boil
Add the sliced lemongrass, kaffir lime leaves, sliced galangal, myshrooms, birds eye chili and bring back to boil
Season with fish sauce, lime juice and sugar
Keep cooking the soup gently for 2 more minutes before adding the peeled ocean prawns into soup. Cook for 1 more minute before serving hot soup into bowl
Garnish the soup with fresh coriander leaves
Tips
Pound lemongrass before adding to soup to intensify flavor!!
