Of the few packaged food items we buy each week, plant based burgers make the cut. We think they are delicious and really have a clean ingredient list label. Perfect for when we have a jammed packed Sunday, but Sunday burger night is our tradition each week, if not Sunday- Saturday! We definitely like to get fancy sometimes and make our own (recipe to come on our scrumptious Mung Bean Burgers)

Ingredients: (Serves 2 Hungry people!)

  • 1 Box of Plant Based Burgers ( I like to use frozen whole foods brand in a pinch or we/ you can make your own!)

  • 1 Large Organic Sweet Potato

  • Bundle of Organic Broccoli

  • Bundle or Organic Asparagus

  • 1 Avocado to slice and top!

  • Couple tbs of olive or avocado oil

  • Sugar-free organic ketchup (Truffle ketchup is incredible if you haven’t already tried it)

  • Salt & Pepper

  • Optional: Garlic flakes, and Herbs de Provence seasoning for sweet potato fries. Tastes super yummy!

Steps:

  1. Preheat to 400 F

  2. Sweet Potato fries: Slice sweet potato into fry size of your liking! Add to parchment paper sheet pan and cook for 30’ or until desired crispiness!

  3. Cut up broccoli, and or asparagus or any other roasted vegetable! Add to another baking sheet cook for 15-20’ (So add 10’ after the sweet potato fries)

  4. Cook Burgers according to instructions on package.
