Feeds 4 People!

Ingredients:

  • 1 Diced yellow onion

  • 4 Cloves of garlic minced.

  • 1/2 Head of broccoli

  • 2 Diced peppers

  • 1 Diced sweet potato

  • 6 scallions, chopped

  • 6 Pasture raised eggs

  • 4 oz Goat or feta cheese to top!

  • Pinch of Salt & Pepper

Steps:

  1. Preheat oven to 350

  2. Heat oven safe skillet (Dutch oven 10-12 inch skillet works great!) over medium heat add 1 tbs of olive oil.

  3. Once warm, sautee onions and garlic for 5-10’ or until lightly browned

  4. Add rest of vegetables until cooked for another 10’-then turn off heat.

  5. Gently shake pan to evenly distribute vegetables

  6. Whisk eggs and salt together

  7. Add egg mixture to skillet, making sure to cover all the vegetables

  8. Optionally sprinkle the frittata with goat/feta cheese before putting in oven!

  9. Bake for 15-20’ or until eggs are set

  10. Season to taste and SERVE…ENJOY!
