Protein Packed Zucchini Bread
There isn’t much to say besides this bread is delicious and a great way to use up the last of the summer zucchini! It’s light enough so you an enjoy it any time of the day you want, which is my favorite part. It’s perfect served warm with some butter and maple syrup drizzled on top for an evening treat or first thing in the morning. It’s so good!
Preheat oven to 325 °
Wet Ingredients:
1 cup shredded zucchini
1 overly-ripe banana
5 eggs
4 tbs maple syrup
2 tsp pure vanilla
1 tbs honey
3 tbs melted coconut oil
1/4 cup melted butter
Dry Ingredients:
1 cup almond/buckwheat flour (any type of flour you want)
1/2 cup ground up or whole oatmeal (pulse with any blender device)
2 scoops unflavored protein powder
3 tbs ground up flax seeds
2 tsp baking soda
1 1/2 tsp cinnamon
1/2 tsp nutmeg
1/2 tsp baking powder
1/2 tsp salt
Fold in:
1/2 cup walnuts
Combine wet and dry ingredients
Grease baking pan with butter
Cook 45-50 mins or until browned
